Ingredients
350 g Lotus biscoff cookies
150 g unsalted butter

3 tart apples

100 g greek yogurt
2 teaspoons vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg

Instructions
- Preheat your oven to 350°F (175°C). Prepare a springform pan by greasing it lightly.
- For the crust, crush the Lotus biscoff cookies into fine crumbs. Mix with melted butter until combined, then press firmly into the bottom of the prepared pan. Bake for 10 minutes and set aside to cool.
- For the apple topping, combine the sliced apples, brown sugar, ground cinnamon, and cornstarch in a bowl. Toss to coat the apples evenly.
- In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth. Add the Greek yogurt, vanilla extract, ground cinnamon, ground ginger, and ground nutmeg, mixing until well combined.
- Add the eggs one at a time, mixing well after each addition. Pour the cheesecake filling over the baked crust, then layer the spiced apples on top.
- For the crumble topping, mix melted butter, flour, brown sugar, and rolled oats until crumbly. Sprinkle over the apple layer.
- Bake the cheesecake for 30 minutes or until set. Let it cool at room temperature before refrigerating for at least 4 hours or overnight.
