1 1/4 cups half-and-half
1 tsp ground mustard

1 handful fresh spinach
1/2 yellow onion
1 1/4 cups shredded Colby Jack cheese
8 oz bacon
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, whisk together the eggs, black pepper, all-purpose flour, half-and-half, ground mustard, and salt until well combined.
- In a skillet, cook the bacon over medium heat until crispy. Remove the bacon, crumble it, and set aside. Drain excess fat from the skillet.
- In the same skillet, sauté the diced onion until translucent, then add the chopped spinach and cook until wilted.
- In a pie crust, layer the spinach and onion mixture, crumbled bacon, and shredded Colby Jack cheese.
- Pour the egg mixture over the filling, ensuring even coverage.
- Bake in the preheated oven for 30-35 minutes, or until the quiche is puffed and golden brown.
- Allow to cool slightly before slicing and serving warm.
