Description
This Broccoli Crunch Salad is a vibrant mix of marinated broccoli, nutty salami, plumped cranberries, and pearl couscous, all drizzled with a delicious red wine vinegar honey dressing.
Ingredients
1 1/2 medium heads broccoli
1 tbsp red wine vinegar
1/4 tsp cooking salt
1 cup pearl couscous
1/2 cup dried cranberries
1 tsp olive oil
100g salami
1/3 cup almonds
1 red onion
2 garlic cloves
2 tbsp red wine vinegar
1 tbsp honey
3 tbsp extra virgin olive oil
1 tsp dijon mustard
1 tsp lemon zest
1/4 tsp cooking salt
1/8 tsp black pepper
1/4 cup parmesan
Instructions
- Shake the dressing ingredients in a jar.
- Chop broccoli into small, spoon-size pieces.
- In a bowl, combine broccoli with red wine vinegar, salt, and 2 tbsp of the dressing. Marinate for 30 minutes.
- Cook the couscous in boiling water for 5 minutes, adding cranberries in the last 30 seconds. Drain and toss with 2 tbsp of dressing while hot. Set aside.
- In a pan, heat olive oil over medium-high heat. Add salami and cook for 1.5 minutes, then add almonds and onion, cooking for 2 minutes, followed by garlic for 1 additional minute.
- Combine the cooked salami mixture with marinated broccoli, let it cool for 10 minutes.
- Add couscous and remaining dressing, toss well and transfer to a serving bowl.
- Sprinkle with parmesan and serve!
Notes
Use all parts of the broccoli for a more colorful and textured salad. Substitute the salami with cheese for a vegetarian option and feel free to swap in your favorite nuts.
