2 Tablespoons butter

1 ½ cups chicken broth

3 Tablespoons cornstarch

1 cup heavy cream

4 cloves garlic

minced

1 ½ teaspoons Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes

½ teaspoon paprika

⅓ cup chopped sun-dried tomatoes

drained

½ cup freshly grated parmesan cheese

68 fresh basil leaves

Instructions

  • In a small bowl, mix together salt, garlic powder, onion powder, and black pepper. Season the chicken breasts on both sides with the seasoning mix.
  • Heat a large skillet over medium-high heat, add olive oil and butter, and sear the chicken on both sides until golden brown. Remove from heat; do not fully cook the chicken.
  • Whisk together chicken broth and cornstarch in a bowl until smooth; add to the bottom of the slow cooker.
  • Whisk in heavy cream, garlic, Italian seasoning, salt, black pepper, red pepper flakes, and paprika to the broth mixture.
  • Place the seared chicken breasts into the slow cooker and pour the olive oil and butter from the pan over the chicken.
  • Top each piece of chicken with chopped sun-dried tomatoes, cover, and cook on low for 6-8 hours.
  • Once cooked, remove chicken and whisk in parmesan cheese. Return chicken to the sauce, add chopped basil, and serve.

Notes

Make sure to whisk the heavy cream thoroughly to prevent it from curdling. For best results, do not lift the lid of the slow cooker while cooking.
