Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, vegetable oil, granulated sugar, and powdered sugar until smooth.
- Add the egg and vanilla extract, mixing until fully incorporated.
- In another bowl, whisk together the flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- In a saucepan over medium heat, combine the butter, brown sugar, chopped pecans, vanilla extract, heavy cream, cinnamon, nutmeg, and salt. Stir until the mixture is bubbling and slightly thickened.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, creating a slight indentation in the center of each cookie.
- Spoon a small amount of the pecan mixture into the indentation of each cookie.
- Bake for 12-15 minutes, or until the edges are lightly golden. Allow cooling on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
