1 1/2 teaspoons cinnamon

1/4 teaspoon nutmeg

2 tablespoons light brown sugar

1 1/2 teaspoons cornstarch

1/3 cup all-purpose flour

1/3 cup light brown sugar

1/3 cup quick-cooking oats

3/4 teaspoon cinnamon

1/8 teaspoon nutmeg

2 1/2 tablespoons unsalted butter melted

caramel sauce for serving


Instructions

  • Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with cupcake liners.
  • In a bowl, combine graham cracker crumbs, sugar, cinnamon, and melted butter. Mix until well combined and press the mixture into the bottom of the muffin liners to form the crust.
  • In another bowl, beat together softened cream cheese, sugar, vanilla, flour, and egg until smooth and creamy. Then, fold in the chopped apples, lemon juice, cinnamon, nutmeg, brown sugar, and cornstarch.
  • Spoon the cream cheese mixture over the graham cracker crusts, filling each liner about three-quarters full.
  • In a separate bowl, mix together the oats, flour, light brown sugar, cinnamon, nutmeg, and melted butter until crumbly. Sprinkle this mixture on top of the cream cheese filling for the crisp topping.
  • Bake for 25-30 minutes or until the edges are set and the tops are golden. Remove from the oven and let them cool.
