3 cups heavy cream (720g)

1 tsp vanilla

¼ tsp salt

5 large eggs

¼ cup cornstarch (40g)

¼ tsp salt

¼ tsp baking powder

⅓ cup brown sugar (65g)

⅓ cup water (80g)

100g milk caramel chocolate

½ cup heavy cream (120g)


Instructions

  • Preheat your oven to 350°F (175°C) and prepare your cake pans.
  • In a bowl, whisk together the egg yolks and ¼ cup of light brown sugar until frothy. Add milk, oil, and vanilla; mix well.
  • In another bowl, combine flour, cornstarch, salt, and baking powder. Gradually mix this dry mixture into the wet ingredients until smooth.
  • In a separate bowl, beat the egg whites until soft peaks form, then gradually add the remaining ¼ cup of light brown sugar while beating until stiff peaks are achieved.
  • Gently fold the egg whites into the cake batter until just combined. Pour the batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  • For the caramel whipped cream, whip 1 cup of the chilled heavy cream until soft peaks; add light brown sugar, vanilla, and salt, then whip until stiff peaks form.
  • For the simple syrup, heat brown sugar and water until dissolved; set aside to cool.
  • For the ganache, heat heavy cream until hot and pour over chopped chocolate; let sit for 5 minutes, then stir until smooth.
  • Once the cakes have cooled, brush each layer with the simple syrup, layer with caramel whipped cream, and top with the ganache.

Notes

For the best texture, make sure your heavy cream is thoroughly chilled before whipping. You can also vary the chocolate in the ganache for different flavors.
